Filo and Feta Pie

Usually when I am in Astypalaia I don’t have a fully functional kitchen, just a kitchenette with a three hob cooktop. Not a toaster oven or microwave in sight. This year I had a full kitchen and decided to use it

You will need some filo dough for this recipe. I used a premade variety that I found in the frozen food section in the local grocery store. If the filo is not cut, you will have to cut it into squares about five or 6 inches square.

Sprinkle high quality crumbled feta onto the filo square, and then fold it in half so that it resembles a triangle. Place the wide side of the triangle into the baking dish with the little points sticking up. Continue with this process of making filo and feta packets until you fill the dish. Pack them together rather tightly.

Temper 4 eggs with butter. Next pour a cup of seltzer water over all of the packets assembled in the baking pan. The egg mixture gets poured in over the top of the packets. Finally sprinkle a full 4 ounces of grated kefalotyri onto the top. Kefalotyri is a hard flavorful Greek cheese.

Bake at 350 for 45 minutes. It will rise a bit and become golden brown. Your kitchen will be filled with the smell of filo baking.

This pie was phenomenal, out of this world. We had Greek salad on the side, but I think a citrusy salad with oranges and arugula would be nice foil for the feta and butter. Of course a nice glass of Sauvignon Blanc or champagne would also be nice
